Off flavors caused by DMS (Dimethyl Sulfide) is a common concern when boiling with a lid on. But through extensive work and testing with the University of Wisconsin-Milwaukee’s chemistry lab, we were able to show that DMS was not only being boiled off properly with our Steam Condenser Lid, but it was completely undetectable with their lab equipment (under 25ppb) after only 30-45 minutes of boiling.
